Ning is from Thailand, and yet we find her selling a variety of foods from all around the world on the enticingly named Salt and Smoke stall.
Her specialities are barbecued chicken and beef brisket. “Lean brisket” she assures us. “No fat on our meat.”
We ask why there is no Thai food. “Islington Council are strict on what each stall can sell to make sure we do not just copy each other so we can protect our businesses, and I have been happily working here for 10 years now and love the business.”
We asked if business has picked up since the Pandemic, and she told us that she reckons it is up to 80% of the level before Covid, and she happily welcomes new customers every day. Her combo bucket is the most popular dish she serves, and looking at it, and smelling the aromas, we are hardly surprised to hear that.
